Green Grants Spotlight: Jon Chin and Kitty Liang, Open Kitchen

Welcome to Green Grants: The People Behind the Projects. Below is an interview with Jon Chin (NYU Steinhardt, Graduate) and Kitty Liang (NYU Stern, Undergraduate) of Open Kitchen, an initiative of Share Meals that received a Green Grant. Open Kitchen is a series of community classes that brings NYU students together and teaches them how to cook. Stay up-to-date with upcoming events here.

GG: Where did you get the idea for your Green Grants project and why did you see a need for this project? 

Jon Chin: Another Steinhardt Master’s student [Leanne Brown] a couple years ago did her thesis on developing a $4 per day cookbook, so I thought it would be great to take that and put it into practice. Our first Open Kitchen class was led by her, and we were able to get students the culinary and shopping skills that they needed.

NYU is this weird and tricky thing. It’s in the middle of NYC, so the cost of living is extremely high. This is the first time students are living on their own and also a lot of them probably aren’t coming from high-cost living areas, so it’s really tough for them to be able to budget correctly–to pay for tuition, clothes and especially food–and I know that if students aren’t eating well, then they’re not performing well. So one really great way to build a stronger community, to build a better NYU, is to make sure our students are eating well. I want to show students a) how to cook for themselves–if they can cook at home, they can reduce their grocery budget by a lot–and b) how to cook healthily. We might be feeding ourselves, but we might be feeding ourselves the wrong things, and that does disastrous things for our health and for our energy and performance. I want to build a better NYU through food.

Vegetarian recipes to get you through the holidays

My favorite part of any holiday celebration is the food. Grandmas, uncles and cousins come together to make amazing comfort food, well comfort for some people. A lot of the holiday meals revolve around holiday roasts and seven fishes, and for vegetarians and vegans this can be a logistical nightmare.

No need to yell at your family for “forgetting” you don’t eat meat, go to your local Trader Joe’s or Ralph’s and pick up ingredients for one of these easy and sustainable holiday recipes.

Sweet Potato Latkes

Whether you’re celebrating a religious holiday or just hanging out with friends and family, potato latkes are a feel-good meal for all. The simple way to do it is cutting potatoes and fry ‘em up, but I found a great vegan recipe you can try here but you can always replace the ingredients with whatever you prefer. Top your beautiful creation with applesauce!

Free NYU veggie events I’m excited for

Whether you’re vegetarian or a proud meat eater I think everyone can get behind free food. That’s why I was curious about attending a Krishna Bhakti Club meeting, the new vegetarian cooking club, after seeing them at Clubfest.

They promised “food you’ll love” but I am admittedly a little bit of a picky eater but the temptation of free food was overwhelming.

Luckily, NYU has a thriving eco-community open to all students and faculty that’s easy to join. I’ll sort through all the lists and Facebook groups and give you the best green-focused clubs to join (in no particular order).

EcoReps is a great way to be a leader in your dorm without having go through the hassle of a hall council election. Plan monthly themed events like February’s Unplugged or Zero Waste Month to get residents into recycling and conservation.

I personally love the EcoRep community, you get close with the other EcoReps in your dorm and bond with others as soon as you find out they’re an EcoRep. Read more
