Yong Chen in “Food Town” Chinatown and the American Journey of Chinese Food describes Chinatowns as “Food places mark the presence of the new Chinatown, located in the uniform American suburbia without the clear physical boundaries that used to delineate the old Chinatown” (193). The Chinese restaurants operated by participants in this project do not indicate new Chinatowns. Instead, they are usually one of the few Americanized Chinese businesses in the vicinity and usually the only Chinese people working and residing in the neighborhood.
